From the Frontdesk, head to the Staff header, click Staff List.
Search their name, click Edit.
From the Notes tab, go to the All Notes for [STAFF MEMBER] panel, click +Add.
Use the Search field to filter notes.
In the Notes title, click Edit or X to delete.
